ABOUT THE PRODUCT
Mauritec is an emulsified fat specially designed for bread and steam bun application. It has a lubricating and softening effect on bread dough there by enhancing the extensibility of dough. Mauritec is also an economical source of fat compared with shortening.

  • Better texture and softer crumb
  • Better crust colour, cell shape and structure
  • Better tenderness to crust which helps in easy slicing
  • Better keeping and eating qualities (fat acts as anti-staling agent)
  • Higher melting point than shortening, hence prevent formation of hard crust
  • Better sidewall strength for sandwich bread
  • Better moisture retention properties
 

INGREDIENTS :

RBD Palm Stearin, Emulsifier, Sugar, Flavours, Permitted colouring and Permitted Preservatives.
 

PHYSICAL APPEARANCE :

Yellow colour, smooth and homogeneous fat

 

SHELF LIFE AND STORAGE

  • Store in clean dry conditions at less than 25°C, away from direct sunlight
  • 12 months, when stored in its original unopened packaging
 

APPLICATION :

  • For use in bread and steam buns application
  • Blended directly in the last stage of dough making
  • Recommended dosage of 4% to 10% on flour weight
 

PACKAGING :

20kg bulk in a corrugated carton with inside HDPE bag
